Toasted Sesame and Two-Bean Salad with Lime Vinaigrette

Serves: 4

For the salad:

1 1/2 cups frozen lima beans
1 1/2 cups cooked black beans
3 scallions (white and green parts), trimmed and thinly sliced on a bias

For the vinaigrette

Juice of 1 lime (about 1 1/2 tablespoons)
2 teaspoons rice vinegar
2 teaspoons soy sauce
1 tablespoon sesame seeds
1 tablespoon sesame oil


1 To make the salad: Bring a small saucepan of water to a boil over high heat. Add the lima beans, reduce the heat to medium and simmer until tender, 8 to 10 minutes. Drain in a sieve or colander and place under cold running water to stop the cooking. Set aside.

2. To make the vinaigrette: Whisk the lime juice, vinegar, and soy sauce together in a large bowl and set aside. Toast the sesame seeds in a small skillet over medium heat, stirring often, until fragrant and browned about 2 minutes. Transfer the hot sesame seeds to the soy sauce mixture and then whisk in the sesame oil. Stir in the black beans, scallions and cooled lime beans. Toss to coat and serve.
