1 tablespoon olive oil
Zest and juice of 1/2 lemon
1/4 teaspoon ground black pepper
10 ounces frozen peas
1/2 teaspoon kosher salt
- Pour the olive oil into a large skillet and add the lemon zest and pepper. Turn the heat to medium-high and cook the lemon zest and pepper, stirring occasionally, until sizzling and fragrant, 2 to 3 minutes.
- Add the peas and salt to the pan and stir to coat the peas. Cover the pan and cook until the peas are tender and warmed through, 4 to 5 minutes. stirring halfway through. Toss with the lemon juice and serve warm.
