Roasted Aaparagus with Breadcrumbs

Serves 2, Generously

Preheat oven to 425 degrees F.  Arrange 1 pound trimmed asparagus on a rimmed baking sheet, in a single layer and drizzle with 1 1/2 teaspoons extra-virgin olive oil.  Season with 1/4 teaspoon coarse salt on 1/8 teaspoon fresh ground pepper.  Roast until tender, 18 to 20 minutes, then transfer to a platter.  Meanwhile, melt 1 tablespoon unsalted butter in a skillet over medium heat.  Add 1/4 cup panko breadcrumbs and cook, stirring frequently until deep golden brown, 8 to 10 minutes.  Remove from heat and stir in zest and juice from 1/2 lemon.  Season with salt.  Serve with lemon wedges.
